BUT all the wasted time was worth it because...

(...drum roll...)

Some lovely soul on pinterest showed me how to make the PERFECT sweet potato fry! 

I've been on a sweet potato fry kick for a while now.  I just love the ones from Guru's here in Provo, but that's because they're deep fried and I don't have to make them. But baking them at home has three benefits: they're cheaper, healthier, and most importantly, I can get them in my mouth sooner if I make them myself. So I've been messing around with a mixture of two recipes, but never got them quite right. It's hard to get them crispy when you're just baking them in the oven. 

But behold!  The secret ingredient...

...cornstarch! 

(did everyone else already know this?)

You coat them in cornstarch first, before the olive oil and the spices. 

It was the only change I made and my fries went from being a little limp and sweaty into total crispy fry perfection!  Bring on the sweet potato fries! I think my skin is going to turn orange.
